What Are Microgreens?
Tiny plants, full flavor. Here's what microgreens actually are — and why chefs treat them as more than garnish.
Microgreens are young vegetables harvested 7–21 days after germination, once the first true leaves appear. They're bigger than sprouts and smaller than baby greens — and pack the most concentrated flavor of any stage in a plant's life.
A radish microgreen tastes like a radish. A broccoli microgreen tastes mild and clean. Each variety carries its grown-up flavor in miniature.
Because they're cut at the seedling stage, microgreens are also nutrient-dense — many studies suggest 4–40× the vitamin content of mature greens, depending on the variety.
