Microgreens vs Sprouts: What's the Difference?

They look similar but they're grown, eaten, and stored very differently.

Sprouts are germinated seeds eaten whole — root, seed, and shoot together — usually after 3–5 days in water, with no soil and no light.

Microgreens are grown in soil or a clean substrate, under light, for 7–21 days. You cut the stem and leaves and leave the root behind.

The practical difference: microgreens have more flavor, more color, and a much better food-safety profile because they're never grown in the warm, wet conditions that bacteria love.
